Your weekly dose of beautiful, nourishing recipe inspiration from our favourite health bloggers. As you’ll all be well aware by now, we are constantly on the look out recipes ideal simple mid-week suppers which still pack a nutritional punch. We think the recipes below fit the bill perfectly (along with a sweet treat thrown in for good measure) and would make great left-over lunches too!


1. COOK REPUBLIC’S CHARRED BROCCOLI MEXICAN SALAD

A wonderful “throw together” supper bursting with beautiful flavours and healthy veggies. We’d serve it with a big dollop of this inspired Stone Fruit Guacamole from Edible Perspective on the side.


2. LOVE + OLIVE OIL’S ROCKET + PEACH CAPRESE SALAD

A beautiful fresh summer take on the traditional Caprese salad - we’d never have thought to sub-in peaches in place of tomatoes but it’s the perfect way to make the most of the UK’s juicy peach season, so stock up at the market this weekend!


3. NUTRITION STRIPPED’S DECONSTRUCTED SUSHI BOWL

We’re all about making our meals an event rather than treating food as fuel to be mindlessly shovelled down in front of the TV. We think this recipe would make for a fun dinner party main and we love that you can just swap in whatever veggies or ingredients you prefer or have to hand!


4. THE BODY BOOK’S THAI CRUNCH SALAD

Aside from the delicious sounding recipe, Ashley Rae’s story is a pretty inspiring reminder of just how powerful  our bodies can be if they’re given the fuel it requires. We’ve been obsessed with crunchy chickpeas ever since we came across Oh She Glow’s Thai-Inspired Hydrating Cucumber Salad with Roasted Spiced Chickpeas, now a regular staple of The Holist kitchen so we’re keen to try this similar Thai inspired salad. In an ideal world we’d make our own red curry paste, but we appreciate that doesn’t quite fit with the ‘quick’ supper vibe so just make sure you buy good quality paste (our favourite is Biona’s Thai curry paste) and scan the label for nasties such as MSG, preservatives, artificial flavourings and colours etc.


5. THIS RAWSOME VEGAN LIFE’S THAI PEANUT TRUFFLES

While this one doesn’t really fit the “easy weeknight supper” box, it was too intriguing not to include! We are huge fans of South East Asian flavours and think that these goodies sound too good not to try!
