It’s that time of the week again - delicious, nourishing recipe inspo to see you through the rest of the week. We came across so many great recipes this week we couldn’t choose between them so this week we have a bumper list for you!
1. GREEN KITCHEN STORIES’ BLACK RICE, KALE & AUBERGINE PILAF
We’d forgotten all about this beautiful recipe until one of our other favourite bloggers, darling of the Aussie health scene, Jessica Sepel posted it as her Meatless Monday recipe this week. The perfect leftovers lunch too, no excuses not to!
2. FOOD 52’S MUJADDARA WITH SPICED YOGHURT
We came across this traditional arab comfort food stale of rice, lentils and caramelised onions while browsing the Food 52 archives this week and immediately added it to our “must-cook” list. Sub in some some wholegrain or brown rice for extra nutrition points! We’d serve with a generous heap of roasted veggies and a big hearty kale salad.
3. OH SHE GLOWS’ CRISY QUINOA CAKES
The perfect combo of comfort food and superfoods. These bad boys will satisfy your cravings while also sneaking in a host of super-nutritious ingredients. Also the perfect healthy veggie (and vegan!) option to bring to those 'last glimpse of summer' barbeques this bank holiday weekend!
4. COOK REPUBLIC’S TURMERIC ROASTED CASHEWS WITH CHIA
The perfect garnish to a veggie packed main or salad or a tasty afternoon snack with a superfood punch - either way we are making these bad boys immediately!
5. NUTRITION STRIPPED’S HEIRLOOM TOMATO + WATERMELON SALAD WITH CORN VINAIGRETTE
We try to mix-up the bloggers we feature in this post each week to keep things interesting but NS seems to make the cut every week as we just can’t get enough of her gorgeous, balanced recipes. This woman can literally do no wrong in our eyes! #sorrynotsorry!
6. HONESTLY HEALTHY’S ALKALINE GAZPACHOS
Seize the last of summer with these simple but flavour-packed alkaline gazpachos - choose from summer greens or strawberry. Perfect for an easy, healthy packed lunch.
7. LOCAL MILK’S HEIRLOOM TOMATO GALETTE WITH LEMON BALM ALMOND PESTO & CHEVRE
We just loved the unusual combination of flavours going on here and lemon balm is one of our favourite herbs, great for the digestive system as well as a natural stress-buster. Galettes, a type of French savoury crepe are traditionally made with buckwheat so are naturally gluten-free, so while the recipe doesn’t specify what type of flour, buckwheat would be our go to!
8. THE FIRST MESS’ WHIPPED COCONUT CREAM
The perfect, foolproof non-dairy whipped cream hack - YUM!
